Galactoligosaccharides
Galactooligosaccharides (GOS) are non-digestible oligosaccharides composed of galactose units with a terminal glucose molecule. They are produced mainly from lactose by the action of the enzyme β-galactosidase through a process called transgalactosylation.
GOS are classified as prebiotics because they selectively stimulate the growth and activity of beneficial intestinal bacteria, particularly Bifidobacterium and Lactobacillus.
